My client Nancy wanted me to share her epiphany:
"Today I was at Target picking up a few things I needed. As I was walking through the Grocery Section making my way to the water I noticed a rather large lady walking towards me with her a very very full cart. As we passed I kinda glanced at the contents of her cart as she turned down the aisle and all I could think was 1 year ago that was me. I was the one walking through the grocery store with Cereal, V8 Fusion juice, bread, milk, chips and processed food galore. I was also struggling with Anxiety, Depression, brain fog to beat the band and overall general lethargy and a horrible self-image.
1 year later, I have energy, I'm weaning off my anti-depressant and then will work on the anti-anxiety meds. I no longer struggle with brain fog, I'm down 2 sizes and am able to buy clothes at my favorite store. I am the smallest I have ever been since about 9th grade. I'm 48. I was an AMAZING realization of where I was one brief year ago and where I am 1 year later. Ironically I was meeting with my Counselor tonite and shared this with her. She has seen me through some of the worst and is now seeing me going through my best.
I am currently working through an very painful injury and am hopefully on the downside of that. Once I'm recovered I will be able to start working out which will include running which as been a dream of mine for years.
I am so thankful I learned of you and your blog. You are a very inspirational person. I know you hear this all the time but THANK YOU, you have really changed my life.

Quinoa
Another question I am frequently asked is about quinoa. Yes, it is higher in protein than most grains, but for those with a damaged metabolism or anyone who wants to lose weight, it is way too high in carbs... just check out the nutritional comparison at the end of the recipe... the numbers don't lie!
We all know that sugar is bad, but we mistakenly believe complex carbohydrates are healthy and we need to eat them in abundance. BUT what if I told you that "Complex carbohydrates" and "Whole Grains" are just glucose molecules hooked together in a long chain; the digestive track breaks it down into glucose...also known as sugar. So a "complex carb" diet and a "sugary" diet are pretty much the same thing.
All starchy foods, like rice, "whole grains", potatoes, and sweet foods, like fruits, raise blood sugar quickly. When digested they are immediately absorbed into the bloodstream, causing an increase in the hormone insulin. Insulin clears sugar and fat from the blood and to be stored in the tissues for future use. This causes weight gain. No matter where the carbohydrates come from; 4 grams of carbohydrates equal one teaspoon of sugar in our body. Let me say that again?4 grams of carbohydrates equal 1 teaspoon of sugar in our body. So with that thought, a small Blizzard has 530 calories and 83 grams of carbohydrates; which equals 21 teaspoons of sugar. A nine ounce bag of potato chips equals 32 teaspoons of sugar! "HEALTHIFIED" QUINOA SALAD2 packages Miracle Rice
1 1/2 TBS butter or coconut oil, softened
1 red chilli, de-seeded and finely chopped (optional)
1 garlic clove, crushed
2 chicken breasts
2 tsp coconut oil
1 tomato, roughly chopped
1/4 cup pitted black kalamata olives
1 red onion, finely sliced
1/2 cup feta cheese, crumbled
2 TBS mint leaves, chopped
1 lemon, juiced and some of the zest
Drain the Miracle Rice, rinse well and set aside. In a small bowl, mix the butter, chili and garlic into a paste. Rub the chicken breasts in 2 tsp of the oil. Lay in a hot griddle pan and cook for 3-4 mins each side or until cooked through. Transfer to a plate, dot with the spicy butter and set aside to melt. Next, place the tomatoes, olives, onion, feta and mint into a bowl. Toss in the Miracle Rice. Stir in the lemon juice and zest, and season well. Serve with the chicken fillets on top, drizzled with buttery chicken juices. Optional: drizzle with additional Greek dressing. Makes 4 servings.

Traditional Quinoa = 436 calories, 16.9g fat, 39.4g protein, 31g carbs, 3g fiber (28 effective carbs)
"Healthified" Quinoa = 288 calories, 14g fat, 33.8g protein, 4.8g carbs, 1.1g fiber (3.7 effective carbs)
