Kai's 2nd Birthday
Today is my baby boy Kai's 2nd birthday, which is a very special celebration because we were unable to be with him on his 1st birthday. As I watched this video of when we first met the boys while holding them tightly on my lap, I couldn't help but cry with an overwhelming feeling of joy.
This video is of our first visit to meet the boys. It was a bittersweet meeting because we had to leave them in Ethiopia after falling in love with them. I am thankful we didn't know it was going to take 6 months of waiting to be able to bring them into the U.S... the wait would have killed me. We took one week at a time, hoping that this was the day we were going to fly to bring them home. Finally on the day before Thanksgiving, we brought them into our home and the journey began!
This is a very special dish to my family! When we were in Ethiopia, one of the things we ate all the time was Doro Watt. It is a traditional dish that is made with lots of onions, chicken and hard boiled eggs. The trick is the spice they use. Craig found a mixture of the spice called Berebere (that way I didn't have to buy a million spices for this dish). We just ordered another canister because, as you can see, the boys LOVE this dish! I asked Micah if he remembers eating it and he didn't really answer... I think he was in food heaven!
"HEALTHIFIED" DORO WATT 2 large onions, chopped fine
1 clove garlic, minced
1/2 cup butter or coconut oil

TBS Organic Ethiopian Berebere2 tsp Celtic sea salt1 whole chicken, separated into legs, breasts, thighs8 organic hard boiled eggs
Chop the onions and place into a crockpot with the garlic and butter/oil, Berebere and salt. Turn on low and let sit over night or until the onions caramelize. In the morning (or after 8 hours), place the chicken into the crockpot (I love THIS crockpot as it has a delay timer so I can make sure it done when I get home:)) and let it cook for another 8 hours or until the chicken is done and very tender. Meanwhile, cook the hard boiled eggs. Place the chicken/onion mixture onto a beautiful dish and mix in the hard boiled eggs. SOOOOO good and easy! Makes 8 servings.
